Easy-to-Make “No Huevos” Rancheros

Tonight’s dinner: “No Huevos” Rancheros — a vegan version of huevos rancheros, made with tofu (and sometimes called “tofu rancheros”). We usually get this dish at the 101 Coffee Shop, which is a 70s-looking diner joint underneath the Best Western hotel in Hollywood. Surprisingly (or not), this is where a lot of celebrities like to go to eat. It’s kind of a low-key place near the 101 freeway, hence the name.

Quick story: I spotted Justine Timberlake and Jessica Biel here once, we ended up seated in the booth right behind them. It was definitely a Hollywood moment and ultimate celebrity siting. I was pretty excited and think Mike was a little bit embarrassed, which is unusual for him.

OK back to our meal. The ingredients we used:

  • Super firm tofu (half a block), cut into 1/2″ cubes
  • Black beans (14oz can)
  • Canned corn (14oz can)
  • Soyrizo (half a package)
  • Ranchera sauce (7oz can)
  • Vegan sour cream (spoonful per serving)
  • Avocado (a few slices per serving)
  • Corn tortillas (one per serving)

This is one of the most simple dishes to make — first step, cut the tofu into cubes.

Drain the corn and beans. Put all the ingredients (except sour cream & avocado) into a pot and heat it up until warm.

While that is heating, warm up the tortillas.

Add a couple of scoops of the mix onto the tortilla, a couple of slices of avocado, and top it off with some sour cream — delicious and filling. Yum!
