Tonight’s recipe was simple and delicious — a French style salad with lentils and tomatoes. What made this dish really yummy was the red-wine vinegar, it really made the flavors pop.
Ingredients we used:
-1 cup dried small French lentils
-3 cups water
-1 large garlic clove, chopped
-6oz of cherry tomatoes, cut in half
-1/2 onion, chopped
-3 tablespoons red-wine vinegar (Trader Joe’s)
-1/4 cup extra-virgin olive oil
-Salt and pepper
A couple of things from the original writeup were not used in our salad, such as fresh dill and basil. Also, their recipe calls for scallions, which we replaced with onions. And the garlic was supposed to boil with the lentils but we chopped it right into the salad. It tasted fine.
The only preparation was cutting/chopping the tomatoes and onions, and waiting for the lentils to cook, which took about 25 minutes. Otherwise, it’s a nutritious and quick meal that fills you up fast. This would be a great summer salad or side dish. We cooked a side of white steamed rice to have with it, but finished eating the lentil salad while it was still cooking – and by that time I was too full to even have it.
